Chicken Leczo

Simple and tasty for everyone

After several days of sailing on the Mediterranean Sea, are you craving familiar home flavors? You can easily find the ingredients for this dish at a local market, and you only need one pot to prepare it. A full and happy crew guaranteed! Sauté the chopped onion in olive oil until translucent, then add the diced chicken. Fry it thoroughly, then add in sequence: corn kernels, diced bell pepper, and zucchini. Pour in the wine, and once it has evaporated, add the tomatoes (preferably peeled) and the broth. Season everything and cook for about 10 minutes, until the vegetables are tender. Serve with fresh bread and it’s ready! Finger-licking good!...

Ingredients:

250 g chicken breast fillet
1 onion, 2 cloves of garlic
1 ear of corn (or 1 small can of corn)
1 red bell pepper, 1 medium zucchini
4 tomatoes
1/2 cup broth
1/4 cup white wine (optional)
3 tablespoons olive oil
2 teaspoons tomato paste (optional)


Spices:

salt, pepper, oregano, paprika, cumin, turmeric

Preparation:

Sauté the chopped onion in olive oil until translucent, then add the diced chicken.
Fry it thoroughly, 
then gradually add: corn kernels, diced bell pepper
and zucchini. Pour in the wine, and once it has evaporated, 
add the tomatoes (preferably peeled) and the broth.
Season everything and cook for about 10 minutes, until the vegetables are tender.
